The gluten free challenge forces us to not simply replace too much gluten containing baking products by too many GF baking products. A cookie is still a cookie.
What we are rather looking for at THE GLUTEN FREE ACADEMY is a balanced, healthy and joyful diet. To ask of a gluten sensitive person that they "just skip" all bread, all cookies, all cake, all pizza, all pasta, is simply unrealistic.
