When it comes to defining moments, entering education at The Emirates Academy of Hospitality and Hotel Management in Dubai was such a one for me. It is one of the leading colleges in the world in that regard, with brilliant trainings, a world wide network and the finest people I've ever met.
If "someone having your back" applies, it does to the teachers who give their all to bring out the best in you; to uncompromisingly train you until you get how to cut lemons in 23 different ways, open a star restaurant with a budget of 100 Dollars, and learn how to balance an ice cube on a silver platter through a restaurant without having it slip on your guest's lab.
Apart from many other useful things …
Until today, butterflies start buzzing in my stomach when I enter the gate.
I graduated from EA in 2006. On 2013, and encouraged by Michael Kitts, my honored teacher at the Emirates Academy and one of the world's leading chefs, and Peter Flieger, the outstanding executive pastry chef of the Jumeirah Beach Hotel, I've returned to my roots, to give lectures on gluten free culinary art.
You never know where things will take you. The spark of goodness in the bad and vice versa won't be revealed unless you walk the path to the very end.
I'd like to share one of my favorite quotes with you:
“If you’re going to try, go all the way. Otherwise, don’t even start. This could mean losing girlfriends, wives, relatives and maybe even your mind. It could mean not eating for three or four days. It could mean freezing on a park bench. It could mean jail. It could mean derision. It could mean mockery-isolation.
Isolation is the gift. All the others are a test of your endurance, of how much you really want to do it. And, you’ll do it, despite rejection and the worst odds. And it will be better than anything else you can imagine. If you’re going to try, go all the way. There is no other feeling like that. You will be alone with the gods, and the nights will flame with fire. You will ride life straight to perfect laughter. It’s the only good fight there is.”
